Leftover bolognese, shaped into quenelles
Broccoli, sliced finely
Strip of lemon rind, crushed with salt
Juice of 1/2 lemon
Salt and pepper, to taste
Toss all the raw vegetables, seasoning and oil together
Serve and add bolognese.
